During our time in Europe we discovered that during the warmer months, there were a lot of salads and sandwiches happening at the restaurants. When I asked why, I was told that because when it is warm they don’t want to eat anything heavy. I mean, duh, right?! This tropical berry fruit salad is just what is in order for these warm days approaching.
Tropical Berry Fruit Salad
Have you ever heard the phrase, eat the rainbow? This is what it is referring to. Eating vegetables and fruits of many different colors add such wonderful nutrients to your body. With this tropical berry fruit salad, you see the rainbow. I was grocery shopping and a guy walked up to me, in real random fashion. He said, “you know the wonderful thing about fruits and vegetables?”
At this time, I am looking at him and waiting for the punchline or for a candid camera. He said, “the wonderful thing about fruits and vegetables is that it removes all the things you don’t need in your body, and leaves all the things you do need.”
That just stuck with me. Life is about balance. There are a lot of us that are actively trying to do what’s best for our body. We must find that healthy balance. When I make this tropical berry fruit salad, I try to make enough to last for a few days or enough to put in the freezer and make a smoothie for a later day.

Tropical Berry Fruit Salad with Citrus Mint Glaze
Ingredients
Fruit
- 1 cup of sliced strawberries
- 3 kiwis peeled and sliced
- 1 cup of blueberries
- 1 cup of blackberries
- 1 cup of mangos
- 1 cup of pineapple chunks
Citrus Mint Glaze
- 5-6 mint leaves sliced finely
- 1 tsp grated orange and lime peel
- 1 tbsp fresh lime juice
- 2 tbsp fresh orange juice
- 3 tbsp agave nectar
Instructions
- Add all of the fruit in a bowl.
- Combine all of the ingredients for the Citrus Mint Glaze and stir until well combined.
- Pour Citrus Mint Glaze over the fruit, gently toss, and serve.
